The soup is made with the freshest heirloom tomatoes, which give it a rich and savory flavor, and it is seasoned with herbs and spices to bring out the best in the ingredients.

“Heirloom tomatoes are indigenous to the Americas and a mid to late summer favorite of mine. Heirloom tomatoes are so flavorful and can be served in so many tasty dishes. I was honored to participate in a cooking challenge at the Smithsonian National Museum of the American Indian “Battle Heirloom tomato” and this soup is one of the items I made to highlight this delicious first food. That event was almost 10 years ago, but this dish continues to be a favorite of mine with changing garnishes and serving hot or cold.” says Chef Jack Strong.


Step by Step Guide to Making Heirloom Tomato Bisque


Prepping

  • In a large pot on medium heat, sweat the onion, carrot, fennel, garlic, coriander seeds and fennel seeds until translucent.  
  • Deglaze with the apple juice and reduce by half.   
  • Add the chopped tomatoes and simmer until cooked through.  
  • Add the fresh tarragon & sherry vinegar at the end and simmer for another 10 minutes.  

Blending and Straining

  • Puree in a blender and strain through a chinos or fine strainer.
  • Season with salt and white pepper to taste, then cool. 

Blanching

  • In a saucepan, bring salted water to a boil.  
  • Score an X on the bottom of the reserved heirloom tomato & blanch just for a minute or until the skin starts to peel away.  

Cooling

  • Drop into a bisque ice bath and allow to cool. Let the soup cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Topping

  • Peel and remove the outer layer of tomato meat, small dice and toss into a bowl.  
  • Mix the diced concasse tomatoes with the fennel fronds, tarragon, Olive oil and season to taste. 
  • For plating place a round ring mold into the center of a soup bowl, fill with your diced tomato mixture, lightly pack and remove mold. Garnish with nice sprig of fennel frond and pour warm soup table side to finish.

Tucked in Historic Old Town on Key West’s serene Atlantic Coast lies The Southernmost Beach Resort, an island retreat away from the hustle and bustle where tradition meets modern luxury.

For some like myself, traveling to the Southernmost Beach Resort in Key West is half a day’s worth of travel. And the journey is well worth the hassle. I arrived in the Conch Republic around 1:30 p.m. The sun was blazing through my black shirt. And I couldn’t wait to switch my New York uniform to one more equipped for Key West’s steamy rays. 
 
Feeling sluggish, excited, and hungry, I walked to the airport’s Lyft pickup area. My driver arrived in less than five minutes, and we set to the Southernmost Beach Resort. Along the way, palm tree leaves swayed in the wind; ocean waves crashed on the opposite side of the road. It’s the quintessential setting of a picture-perfect beach town. We exited the South Roosevelt Highway and entered the streets lined with pastel-colored houses and white picket fences. A Christmas tree wrapped in patriotic flags, people riding their bikes and luxury red cars were a welcome distraction amongst the eateries and boutiques.
 
Tucked in Historic Old Town on Key West’s serene Atlantic Coast lies an oasis that’s been compared to Cuba’s capital city, Havana, also known for its Spanish colonial architecture. The Southernmost Beach Resort offers an island retreat away from the hustle and bustle where tradition meets modern luxury. You’ll find lush garden pathways, endless ocean views, and sandy beaches on this quaint stretch of America’s Southernmost point. A short walk from the eclectic shops, famed nightlife, and signature architecture of Duval Street, the hotel itself is a collection of buildings that spread over six acres.

Day 1 at SOMO

Sounds of roosters, the ocean, and people cheering from the Southernmost Beach Resort’s three pools greet new guests. There’s a waft of salty air that is novel at first sniff, but as the day ensues, it becomes a comforting scent. I met Davaldo, one of the friendly receptionists who welcomed me and others to the resort. I sipped on a glass of complimentary prosecco before heading to my room. It was located across the street where two of the resort’s pools (Tranquility and Shores), the Southernmost Beach Cafe and gym are also found.

Located above the Shores Pool, my room 7310 was bright, airy, and fit for two people. The room boasts a beach cottage aesthetic and is bright and airy with accents of blue. There’s also a balcony featuring an amazing view of the ocean. I was pleasantly surprised to find a bag of Kermit’s Key Lime Butter Cookies, a Kermit’s Key Lime Shoppe product, on my desk. The shop is well known in the Keys and one that I was determined to visit during my less than 72-hour stay on the island.

Dressed in beachy clothing, I met with Reese Jackson, the marketing coordinator, who gave me a quick tour of the resort. I saw some local legends–– gypsy chickens roaming on the property. These birds roam freely in the city and are considered symbols of the area, as they are found on many souvenirs, like the magnets that currently adorn my fridge.

Once the tour concluded, I headed to the Southernmost Beach Cafe, the hotel’s oceanfront restaurant. I whispered to myself, ” Yes, it’s finally time to eat.” My eyes glazed over the lunch menu, which featured starters like the conch chowder and oysters—followed by shareables such as beach bread and fried calamari.
Further down, where my eyes zoomed in, were the handhelds like the regal lobster roll and sides such as pasta salad and coleslaw. I ordered a lobster roll with a side of coleslaw, in true beachside dining fashion. While the conch is the favored food of Key West, Caribbean spiny lobsters are also popular. They are also known as crawfish and are harvested by scuba divers and local lobstermen.
 
While I didn’t officially meet a lobstermen, I met Rachel working at one of the stands for Barefoot Billy’s, an excursions company based in Key West, who mentioned her partner catches lobster for a living. In our short encounter she also spoke highly of sunset sailing in the Keys, an experience I regretfully had to miss. However, from what she described and what I’ve read, it is a one-of-a-kind way to witness the island and meet people you can share a toast with, expressing massive gratitude to the beauty of the world. She also mentioned an exciting upcoming project with her partner, the lobsterman; they plan to open a food joint, which is one of many reasons I’d need to revisit Key West in the near future. 

 
If you’re wondering, should you order a lobster roll? The response is a resounding yes. The buttery brioche is a vehicle for lobster meat doused in mayo. It hits every spot of my stomach, especially after my 4:30am wakeup call and subsequent grueling airport travel. To wash down the glorious meal is an Aperol spritz. It is an unpopular decision in the Keys and incredibly unpopular once Labor Day passes. Still, the spritz is the only option when it’s above 80 degrees, and rippling blue waves look directly at me.
 
At 3:30 p.m., there are only a few diners and people sitting at the bar, not too many dare to bear the sun’s rays on the beach. The guests fill their time drinking at the pools. On my way back to the room, I overhear couples discussing their plans for the evening: walking Duval Street and dining at the Southernmost Beach Cafe for dinner. 
 

What’s on the dinner menu?

There’s a lot to choose from, and it does lean heavily on seafood. First, the starters include the Key West Pink Peel-and-Eat Shrimp Conch Fritters with Key Lime Mustard. There are also salads like the Classic Caesar, which embodies an element of the ocean with its white anchovies. You can order the Day’s Catch, which is located on the “From the Dock” section of the menu. The Day’s Catch dish is encrusted with crumbled macadamia nuts and accompanied by cracked fingerling potatoes, French green beans, kalamata olives, Key Lime Bure, and mango chutney. If you’re feeling extra fancy, get the Florida Lobster grilled and served with quinoa pilaf and brussel sprouts. For non-seafood enthusiasts, chicken and pork are available in the On the Grill section and a Garden Pasta from the Minute Pasta section. A decent list of sides is available to accompany main dishes or starters like the umami-tasting Forest Mushrooms

Still stuffed from my late lobster roll and coleslaw lunch, I skipped dinner. However, as expected, the munchies appeared a couple of hours later, and luckily, I had a sweet gift of buttery key lime sugar-coated cookies sitting on the desk. These cookies were from the legendary Kermit’s Key West Key Lime Shoppe, founded more than 30 years ago. Today it has established a reputation for its tasty Key Lime creations – including being recognized as having the best Key Lime Pie by Food Network and National Geographic. 
 
I grabbed a few cookies and wandered onto Duval Street for a nightcap. In Key West, Duval Street is home to a vibrant collection of hole-in-the-wall bars, historic haunts, funky shops, vibrant galleries, and outdoor cafés. It is also home to an active and fun-loving LGBTQ community and is a great place to check out a drag queen show or two. On Duval Street, talented divas perform nightly shows at Aqua Nightclub, La Te Da, and 801 Bourbon Bar.

Day 2 at SOMO

Mornings in Key West are far different than ones in New York. In the latter, I typically wake up to honking cars or construction. At the Southernmost, it’s replaced by roosters crowing and rumbling ocean sounds. Following an early morning run at the resort’s modest gym, I returned to the Cafe for breakfast, served between 8 a.m. and 10 a.m. My hangry eyes lead the order again, and I walk away with lobster benedict, a parfait, and grapefruit juice. While I’d much appreciated enjoying my feast beachside dining, I had to prepare for a presentation and decided to take my order to my room. ( to confirm the resort does not offer in-room dining / room service). I devoured a parfait, with a beautiful medley of granola, vanilla yogurt, and fresh strawberries. It was the perfect option for a hot day, which are very common in the Keys. The lobster benedict was equally delicious, the kind of meal that will make you want to nap at one of the resort’s fabulous pools.

Beyond the resort, there are more activities to enjoy, such as thrilling excursions on jet skis, laid-back tours on the trolley, or sunset sail cruises by Fury Adventures or Barefoot Billy, most of which offer bites and drinks in the package. While I debated on the sunset sail cruise with Barefoot Billy, my heart was set on reading on the beach and dipping myself into one of the heated pools.

After my pool time, happy hour arrived. As you may have guessed, I found myself at the cafe again. I met bartender Ashley, who concocted a potent Skinny Margarita; what made it “skinny” was the higher Don Julio ratio, not the removal of sugar. This margarita is a solid choice for a cocktail that’s not extremely sweet yet packs a punch. If you’re seeking a sweet drink, there are several to choose from, such as the Key Lime Margarita, Key Lime Colada, and SOMO Slam.

When dinner time arrived, I ordered a varied selection from the Southernmost Beach Cafe: conch fritters, grilled octopus, and a side of mushrooms. Post dinner, I wandered to Duval Street to find Kermit’s Key Lime Shoppe to purchase one last signature pie. Eating within 30 minutes of purchasing is recommended. Citrusy, sweet, and tart, the pie is a burst of refreshing flavors and contrasting textures deriving from the creamy custard and graham cracker crust. Upon returning to New York, I also purchased the Key Lime Butter Cookies and Key Lime Coated Peanuts, which friends and family devoured.

Final Day at the Southernmost Beach Resort

On the final day, I had an early afternoon departure. To make the most of my time, I woke up before sunrise and walked to the Southernmost Point of the US, a few minutes away from the Southernmost Beach Resort. In the wee hours of the morning, it appeared most people were either in deep slumber or getting in their morning workout. I watched the sun pour on the horizon, golden rays stretching ever outwards into the sky. It is brilliant, vibrant, and striking on the waters near the colorful landmark buoy. I soak it all in before I visit the Southernmost Beach Cafe to reorder the gorgeous berry parfait before changing into my all-black uniform to return to reality.

The 170 year old original Boston Cream Pie recipe, courtesy of Omni Parker House, is wicked awesome (that’s Boston lingo for REAL GOOD). It boasts a delicious two-layer sponge cake filled with a rich and velvety pastry cream and topped with a rich chocolate icing. 

What is Boston Cream Pie?

Boston Cream Pie is a classic American dessert that has been enjoyed for over 150 years. Despite its name, it is not actually a pie, but rather a two-layer sponge cake filled with rich pastry cream and topped with a layer of chocolate ganache or fondant. The dessert is said to have been invented at the Parker House Hotel in Boston, now known as Omni Parker House. The Parker House was founded in 1855 by Harvey D. Parker, and it quickly became a popular gathering spot for Boston’s elite. It was at the Parker House that French chef Sanzian created the original recipe for Boston Cream Pie in the 1860s. The dessert was an instant hit, and it soon became a signature dish of the Parker House. 

Today, the Omni Parker House continues to serve its famous Boston Cream Pie, which was originally called “Parker House Chocolate Cream Pie,” but over time, the name was shortened to “Boston Cream Pie.”  It has actually won numerous awards over the years, and it is considered a must-try when visiting Boston.  Today, Boston Cream Pie is a beloved dessert that can be found in bakeries and restaurants across the United States. However, if you’re unable to visit Boston, Omni Parker House has a wickedly awesome treat for you, it’s highly coveted Boston Cream Pie recipe.

At the Omni Parker House, the Boston Cream Pie is served in individual portions, but the recipe is for one large cake.

Step by Step Guide to Making Boston Cream Pie


1. Make the Pastry Cream

  • Bring to a boil in a saucepan the butter, milk and light cream. 
  • While this mixture is cooking, combine the sugar, cornstarch and eggs in a bowl and whip until ribbons form. 
  • When the cream, milk, and butter mixture reaches the boiling point, whisk in the egg mixture and cook to boiling. Boil for one minute.
  • Pour into a bowl and cover the surface with plastic wrap. 
  • Chill overnight. When chilled, whisk to smooth out and flavor with 1 tsp. dark rum

2. Making chocolate and white fondant icing

  • For the chocolate fondant: Warm 6 oz. of white fondant over boiling water to approximately 105 degrees. Add melted chocolate. Thin to a spreading consistency with water. 
  • For the white fondant: Warm 5 oz. of white fondant over boiling water to approximately 105 degrees. Thin with water if necessary. Place in a piping bag with a 1/8-inch tip.
  • Alternate approach: Melt the chocolate. Combine with warm water. Combine ingredients and warm to approximately 105 degrees. Adjust the consistency with water. It should flow freely from the pastry bag.

3. Preparing the cake

  • Preheat oven 350 degrees
  • Wet ingredients: Separate egg yolks and whites into two separate bowls. Add ½ of the sugar to each bowl. Beat both until peaked. When stiff, fold the whites into the yolk mixture. 
  • Dry ingredients: Gradually add flour, mixing with a wooden spatula. Mix in the butter. Pour this mixture into a 10-inch greased cake pan.
  • Baking: Bake at 350 degrees for about 20 minutes, or until spongy and golden. Remove from the oven and allow to cool fully.
  • Adding the pastry cream: level the sponge cake off at the top using a slicing knife. Cut the cake into two layers. Spread the flavored pastry cream over one layer. Top with the second cake layer. Reserve a small amount of the pastry cream to spread on the sides to adhere to the almonds.

4. Final touches

  • Spread a thin layer of chocolate fondant icing on the top of the cake. 
  • Follow immediately with spiral lines starting from the center of the cake, using the white fondant in the pastry bag. 
  • Score the white lines with the point of a paring knife, starting at the center and pulling outward to the edge. 
  • Spread sides of cake with a thin coating of the reserved pastry cream. 
  • Press on toasted almonds

Sponge Cake

  • 7 eggs, separated
  • 8 oz. sugar
  • 1 cup flour
  • 1 oz. melted butter

Pastry Cream

  • 1 tbsp. butter
  • 2 cups milk
  • 2 cups light cream
  • 1/2 cup sugar
  • 3 1/2 tbsp. cornstarch
  • 6 eggs
  • 1 tsp. dark rum

Icing

  • 5 oz. fondant for white icing
  • 6 oz. fondant for chocolate icing
  • 3 oz. semi-sweet chocolate, melted

Substitution for Fondant Icing:
Chocolate Icing

  • 6 oz semi-sweet chocolate, melted
  • 2 oz. warm water

White Icing

  • 1 cup sugar (confectioner’s sugar recommended)
  • 1 tsp. corn syrup
  • 1 tsp. water

Instructions

  1. Sponge Cake Preparation:
    • Separate egg yolks and whites into two separate bowls.
    • Add ½ of the sugar to each bowl and beat both until peaked.
    • Once stiff, fold the whites into the yolk mixture.
    • Gradually add flour, mixing with a wooden spatula.
    • Incorporate the melted butter.
    • Pour this batter into a 10-inch greased cake pan.
    • Bake at 350°F for about 20 minutes or until spongy and golden.
    • Remove from the oven and let it cool completely.

Lauren Von Der Pool’s switch to a plant based lifestyle and becoming a renowned vegan chef isn’t linear. Unlike many culinary stars, her journey kicked off  because of a near death experience at the mere age of sixteen. This made her metaphorically and literally want to remove the “poison” in her life. And she did, by swapping processed foods with ones that would help her feel, look, create and be better—specifically raw foods.  Ultimately, she realized she had a great purpose on the planet, to heal herself and others with nature’s bounty.

One woe many vegan chefs face including Chef Von Der Pool is dispelling the myth that vegan food is bland. She overcomes this challenge daily with her beautiful creations like vegan deviled eggs served at the 2022 Met Gala. Or her cilantro mustard dressing that’s loved by Common. Soon she’ll take on demystifying the myth again at the “Spices of the Caribbean” event, held at the luxurious Jade Mountain. The chef will lead the culinary program. Guests can expect a fusion of West Indian and International flavors presented in vegan al fresco cooking class, farm to table dinner or other events.

Before leading the event, it’s worth noting the Guyanese-American chef has developed a very impressive resume. As hinted, she catered high-profile events such as 2022 Met Gala, as well as The Oscars, The Grammys, The Olympics, Wimbledon. Most notably, she worked alongside Former First Lady Michelle Obama, playing an instrumental role in her 2009 child obesity prevention campaign, ‘Let’s Move.’ She’s also a Le Cordon Bleu graduate and cookbook author of Eat Yourself Sexy. Additionally she has appeared twice on The Food Network’s hit TV show, Chopped, and has also worked with world-renowned chefs, including Marcus Samuelson, Alice Waters, and Wolfgang Puck. While you would think that one of the aforementioned is her most outstanding achievements, you are mistaken. 

In an exclusive interview with Honest Cooking, Von Der Pool gives us a glimpse of who she is, her inspirations, her biggest achievement to date, and what we can expect next from the self-proclaimed “Queen of Green.”

Who is Chef Lauren Von Der Pool?

I’m a multidisciplinary artist, author, and philanthropist. Everything I do has a foundational piece of love, harmony, and devotion to the creator. I like in myself to be a superhero here, on a special assignment to help raise the consciousness, and awareness of humanity in fun and creative ways.

Before your near-death experience, what was your career path?

I simply wanted it to be a star. My love for being on the stage, singing, dancing, and acting were my first true loves. I was just not willing to be a starving artist, literally and figuratively, so I chose food because, let’s be honest, I am also always hungry.

What dishes can we expect at the “Spices of the Caribbean” event?

Attendees can expect a multi-sensory experience fused with the International flavors of Guyana, India, Asia, Africa, Latin America, Brazil, and Europe. My specialty is taking the traditional and reimagining its possibilities. Expect fun and flavorful food art.

The way your present dishes look like sculptures one may witness at the MET, what art or artist inspires you?

Everything in life inspires me! I could walk down the street and see the most random outfit or sculpture that can inspire my art! That can invoke the birth of a flavor profile. I allow all things to inspire me. If I could think of an artist that inspires me the most, it would be GOD.

What are your favorite West Indian vegan dishes?

My favorite West Indian dishes are actually not vegan, but I have learned to veganize them. My favorites are “Buss up shut” ( Paratha roti) with curry potatoes, pepper pot, doubles, and “saltfish” and bake!

What is your biggest accomplishment?

My biggest accomplishment is my work in the community with people who might never experience my food at the Oscars or the Met Gala. I am most proud of the philanthropic work I do. My six-week summer youth employment program is, hands-down, one of my favorite accomplishments. Seeing young people transform in front of me is always one of my greatest pleasures. Especially because I was one of those young inner-city youth. It’s a gift to me that I can support them, which as a child, I longed for so much.

What are five ingredients you cannot live without?

The five ingredients that I cannot live without onions, Ume plum vinegar, mangoes, coconuts, and spicy peppers of any kind.

What’s next for the Queen of Green?

What’s next for me is overall expansion. I’ll have more pop-up dinners, my first food art exhibition, products, classes, offerings, and stage presence.

Unlike its neighbors, the resort stands out; its 710-foot-tall venue has made waves across the state thanks to its spectacular amenities, with nearly 2,000 slot machines, a 45,000-square-foot beach club, and more than 15 drinking and dining venues packed into one property.

The Room

Ocean has 1,860 guest rooms and suites that range from tastefully decorated double bedrooms to the beach-inspired social suite. The interior of the rooms is clearly inspired by the Atlantic Ocean that many of the rooms look out onto. White, grey, and blue accents, with wooden features, bring the beach aesthetic inside.

Rooms are spacious and well-designed, perfectly utilizing minimalist fashion with floor-to-ceiling windows that spotlight the vast ocean and vistas of the infamous boardwalk.

However, a beach-inspired social suite is where the beach-chic style and 21st-century luxury come together. At 1,389 sq ft, the suite features two bedrooms, a wet bar, and awe-inspiring views of the Atlantic Ocean. If you can bare it, keep the curtains open throughout the night for a spectacular sunrise.

The Entertainment

Ocean Casino Resort is an entertainment hub in Atlantic City, famously known as the Entertainment Capital of the Jersey Shore.

The resort has Ovation Hall, which houses different types of entertainment like music performances, comedy shows. It also features pre-screenings for highly anticipated movies. The experience is certainly unmatched, and I can attest to it based on a recent weekend trip. I witnessed the space transform into pink for the highly-anticipated Barbie film. There was nothing quite like listening to Ryan Gosling belts his heart out in “I’m Just Ken” inside the Hall with its unmatched sound.

Before attending a show at the Hall, you grab a couple of shots at the resort’s Birthday Pop-Up bar at 1927 Lounge, only available in the summer. This one-of-a-kind bar is whimsical, to say the least, featuring neon signs, rainbow tapestry, and colorful potent cocktails. Celebrating a birthday, anniversary, or any milestone here will make anyone feel special.

During the day, guests can book one of the resort’s Cabanas. These are different from the ones you’d imagine where you only get a bed and an umbrella; they are a private oasis overlooking the Atlantic Ocean. Whether it’s a birthday party or if you’re celebrating “Barbiecore,” the Cabana is an ideal setting for a special gathering. Ocean’s Cabanas can be transformed and tickled in pink. Barbies parade around the pool donning classic outfits like disco, cowgirl, or beach, ready to serve you a specialty cocktail and make you believe you are in the Malibu Barbie Dream House.

For nighttime entertainment, you can head to HQ2 Nightclub to dance the night away. It’s a two-level nightlife destination where guests can fully immerse themselves in a diverse dance-club experience filled with world-renowned musical talent. Or visit Nola’s Bar & Lounge, an entertainment, and lounge where cocktails and music rendezvous like a Barbie Drag Show. Lastly, guests can visit the casino, which the resort is best known for. It’s a gambler’s paradise that houses 138,000 sq. ft. of gaming entertainment.

Dining

Too often, restaurants down the Jersey Shore can have less-than-stellar food. But restaurants at Ocean Casino Resort abolish this preconceived notion. And the results are a sublimely specific combination of excellent service, new takes on classic American food, and incredible ocean views.

Villain and Saint

This isn’t a standard Jersey Shore restaurant — it’s a bit of an artsy haven with local live performances. The modern gastropub and rock-n’-roll music hall feature draft beers from around the world and bass-pumping live shows from Atlantic City favorites every weekend. But it’s not a total stand-up scene: plenty of comfortable seating with sightlines to the stage! There is something for everyone with a carefully curated menu, including KFC-Korean Fried Chicken Wings, Fried Shepard’s Pie, biscuits with hot honey, and pork loin.

Linguini By the Sea

At this Atlantic City seafood stalwart, ceviche, speck-wrapped scallops with English peas, and linguini alle vongole with manila clams and garlic white wine sauce await. Additionally there are top-notch specialty cocktails like Ocean’s 5th Birthday Cake Martini and plenty of wine and beer. Stunning ocean views accompany classic Italian cuisine with a contemporary twist.

Ocean Steak

Ocean Steak is for steak lovers and other eaters, thanks partly to the restaurant’s ample seating and striking views of the Atlantic Ocean. Drop in for cocktails, dry-aged porterhouses to share, and other rich options like 30-day snow-aged Japanese Wagyu and Pastrami Rub Atlantic Salmon.

Serendipity3

A decades-old American restaurant best known for its Wonka-esque desserts and quirky interior has a home inside the resort. Similar to the original, the menu features hamburgers, salads, mac and cheese, among other hearty dishes. But the real draw is the desserts. These include Serendipity’s famous Frrrozen hot chocolate, which you can get straight or in the salted caramel. If you’re  unable to slurp it all, you can take it back to your room. You’ll be thrilled to sip it while catching up on the Real Housewives of New Jersey as a nightcap.

Things to do in Atlantic City.

Atlantic City is famous for its five-star hotels like Ocean Casino Resort, casinos, and unforgettable live shows. Consequently it is also home to the world’s first and longest boardwalk, over 7km long. After a morning workout, grab an egg white burrito from Caffeincino and head out to the boardwalk to people watch, perhaps one of the best activities to do.

There is also an amusement park named the Steel Pier. It’s packed with old-school rides, like Ferris wheels, roller coasters, arcade games, and eateries. For a truly memorable afternoon, buy a bag of saltwater taffy and explore the bright lights.

Whether you want to soak up the sun while enjoying a good book or jump in the water to surf, kayak, or swim, the beaches in Atlantic City will not disappoint.

ARoqa continues to create an elevated Indian dining experience donning Indian takes on tapas and modern takes on traditional dishes.

Midtown New York may be known as the primary repository of Indian restaurants, where enticing curries and pillowy naans take center stage on the menus. That is until Monica Saxena came into the culinary world in 2017 and opened aRoqa, a modern Indian restaurant located in Chelsea.

The Atmosphere

Now in its 7th year, the vision of aRoqa continues to create an elevated Indian dining experience donning Indian takes on tapas and modern takes on traditional dishes. The eatery allows guests to explore Indian cuisine in a new way paired with a refined, Indian-inspired cocktail menu by Beverage Director Prasad Pawar.

Entering aRoqa, you’ll be stunned by the black and gold cocktail bar. It instantly catches the eye and lures you into the main dining room, nestled in a dark, cozy cave by Texer Nam.

The Michelin-recognized establishment celebrates Monica Saxena’s journey from India to California to New York. The name aRoqa originates from the term “roka”. It is a traditional Indian event where families gather and celebrate the newfound engagement of a couple over a meal. The Mughal culture inspires the meals and the ambiance, which spark that feeling of celebration and festivities for customers.

The Flashy Cocktails

Beverage Director Prasad Pawar, from Michelin-Starred Vestry, leads the new cocktail menu. It is inspired by his Indian roots, utilizing spices and herbs uncommonly used in American cocktails. His creations implement all house-made juices and syrups, showcasing fragrant and aromatic options that complement dishes emanating similar spices and profiles, such as:

The Emerald Proposal ($20) is a refreshing beverage with tequila, mezcal, and earthy pureed cucumber and peas ingredients. At first glance, the green potion may give the impression that it tastes like a bitter green, healthy juice. But this is far from the truth. It’s refreshing, not too sweet, and simply delightful.

For tequila fans, another libation to try is the Chipotle Margarita ($20). At first, sipping the cinnamon chipotle makes a striking statement; it brings memories of being at a barbecue which would be odd for a cocktail. However, when you keep consuming it, the bright flavors of pineapple and lime surprise the buds along with sweet Grand Marnier.

Rum-based drinks include the Indian Sunset ($20.) It’s also laced with vodka and infused with the tropical flavor of mango passion puree, and hibiscus rose. Another is the Inferno, as the name infers it is a fiery choice. It lights up when it’s dusted with fresh ginger cinnamon. Carrot juice is responsible for the orange hue and delivers a sweet flavor to the smoldering cocktail.

The Cuisine

The menu begins with Taste Plates, which features a collection of beautifully presented small plates. There are several options, but a few standouts include the Kurkhuri Bhel ($16). This vegetarian dish consists of crispy rice puffs paired with an addictively sweet tamarind chutney for dipping. Similarly, the Corn Paddu ($17) is another great vegetarian option where corn and rice-based fritters are served with a bright and tropical coconut kaffir lime chutney for dipping. Other choices are the Shredded Crab ($19), bite-sized rice pancakes topped with spiced shredded crab and tomato. As the name implies, Paneer Lentil Soup Shots ($19), a lentil-based South Indian clear soup, is served in a shot glass. Lastly, Prawn Cutlets ($21), fragrant South Indian Spices, make a bold statement in the golden panko-encrusted chopped prawns.

Next on the menu are the Shared Plates, where signature dishes include Okra special ($22), sautéed whole okra in blended onion tomato sauce with a hint of pomegranate. Chicken Tikka Masala ($24) tender pieces of chicken are marinated in a blend of spices and then grilled to perfection, giving them a smoky and slightly charred flavor. The rich and creamy tomato-based sauce boasts fragrant spices creating an irresistible aroma and taste. Famous in the region of Goa and at aRoqa is the Goan Shrimp Curry ($27). The dish features sautéed jumbo shrimp in a blend of coconut tamarind sauce.

Traditionally Indian cuisine comes with fragrant basmati rice, and aRoqa’s Shared dishes follow suit. But it would be remiss if you don’t complement your shared plate, especially if it’s the Goan Shrimp Curry with an order of Garlic Naan ($7). It’s synonymous with having peanut butter and jelly and always pleases. The soft and fluffy texture of the bread complements the Goan Shrimp Curry well, making it an irresistible combination. Every bite of naan with curry is like a journey to the heart of Indian cuisine, where spices and flavors converge in a symphony of deliciousness.

Beyond the Taste and Shared Plates, a variety of Biryani ($22) and a selection of Stuffed Breads ($7) like Paneer Aur Hari Mirch Kulcha, stuffed with Indian cheese and green chilies are available to order.

Dessert

For desserts, aRoqa’s are imaginative and visually appealing, as expected. For example, the Rose Pudding with Gulab Jamun ($15) would be perfect to serve at a watch party for the highly anticipated Barbie movie. It features a baby pink hue, is adorned with sliced almonds, and is topped with a bright yellow flower. The pink color comes from the infusion of rose essence. It is also topped with soft and spongy Gulab Jamun balls, making for a perfect blend of flavors and textures.

Based on the crowd populating the tables at 6 pm on a recent Wednesday night, it’s clear aRoqa’s offerings will keep generating neighborhood buzz.

Situated on St. Lucia’s southwestern Caribbean coastline, Jade Mountain is a cornucopia of stunning architecture, celebrating the island’s incredibly scenic beauty.

I knew my trip to St. Lucia would be memorable, but I didn’t realize how incredible it could be until I stepped onto the Jade Mountain resort.

It took almost an hour for my friend Vanessa and I to arrive at Jade Mountain. And it was well worth the bumpy commute. Situated on St. Lucia’s southwestern Caribbean coastline, a cornucopia of stunning architecture celebrating the island’s scenic beauty awaited us.

When we entered the property that sits majestically above its sister, the 600-acre beachfront resort of Anse Chastanet, resort staff, Erwina, greeted us with a minted towel to help alleviate the Caribbean heat. Giddy with excitement, we entered, and our jaws immediately dropped. Stunned by the architecture of owner Nick Troubetzkoy, the bold design will instantly make you feel like you are in an M.C. Escher-meets-“Jurassic Park” scene. Slate-gray stones drape with lush, hanging greenery and pops of colorful blown glass. Staircases zigzag, and each space boasts views of Soufriere Bay, the Caribbean Sea, and the majestic Piton Mountains, a UNESCO World Heritage Site. It is easily one of the most atmospheric and romantic scenes our eyes set upon.

Our eyes remained glazed as we walked to the Jade Mountain Club, the resort’s main dining area. While we waited for our room to be ready, other staff members, Lester and Jerome, made us a refreshing cocktail with grenadine and informed us to visit the above Celestial Terrace. The terrace, like every other corner of the resort was simply beautiful. Not only does it offer awe-inspiring views of the island, but it’s also where you can start your day with peaceful yoga and end your day by sipping a cocktail as the sun sets over the Piton Mountains.

The Sanctuary

During the construction of the luxury suites, Nick and his wife Karolin Troubetzkoy realized that the term “suite” was far too conventional. A suite usually refers to a technical separation of bedroom and living room which is not the case at Jade Mountain where large open spaces are celebrated.  To capture this popular comment made by visitors “Why ever leave this heavenly place, we don’t want to come out again,” the term “sanctuary” was discovered. It was the perfect description of both physical and psychological space.

The resort houses twenty-nine heavenly Sanctuaries and each has its own aesthetic shape and scheme. Twenty four of which has its own infinity pool that differs with the hues of iridescent glass tiles that glimmer in the changing light, like ours in jade. Additionally, the Sanctuary’s living areas are finished with more than 20 different species of tropical hardwood flooring and trims harvested in an environmentally friendly way.

We thought the sights couldn’t beat what we soaked in on the Celestial Terrace. That was until we met Vince, our friendly butler, also giddy with excitement for the views awaiting us in our Sanctuary. Beyond the large wooden door, our Sanctuary gave us an unimaginable picture of the Piton Mountains. There was also no telephone, T.V., or clock in sight, reminding us that we came to St. Lucia to disconnect from our realities at home. The sounds of nature felt eminent, like we were a part of it. We looked at each other and whispered, “This is paradise.”

Bridges connect each of the individual sanctuaries to the Jade Mountain Club, which sits at the resort’s highest point. It is home to an open-sided restaurant helmed by Chef Allen Sesser and his culinary team. At dinner you can expect something different each night as the menu changes. This point also emphasizes Jade’s approach to seasonality and sustainability. Depending on what’s caught by the fishermen and what’s picked on the fruit trees, that will determine the outcome of what’s on the menu.

As fine dining menus are contrived to be, the menu was a non-stop showcase of St. Lucia’s exotic and impressive cuisine, and Vanessa and I were excited for our palates to explore them. Before the amuse-bouchées arrived, our waiter enticed our tastebuds with a breadbasket. It featured fresh house-made bread, including a lavash cracker and coconut roll. Several unique dips accompanied them, such as the smoky eggplant ash. After several nights of sweet and strong rum punches and many other rum-based concoctions, we decided to have a simple glass of white wine, a classic Pinot Grigio which went well with our forthcoming meals.

Live music played in the background while couples shared intimate moments and gazed at Piton Mountain’s silhouettes in the darkness. Captivated by the romantic setting, our waiter surprised us with our amuse-bouche. For the night, it was tiny cubes of mango marinated in salt and local spices, at which point, any speculation as to what awaited our tastebuds was crystallized – it was pure happiness. From that point, we knew that the dishes ahead would be beautiful in their presentation and flavor profile.

We had a couple of starters following the breadbasket and amuse-bouche. The first was the Thai Curried Diver Scallop. The Diver scallops, Fried Dasheen Croquette, and Zucchini Pico sat in a flavorful pool of Thai and Caribbean spices topped with a Cauliflower Puree. It was an impressive dish giving the sight of the Piton Mountains some competition.

Callaloo Soup, Jade Mountain

Growing up in the Caribbean, I am familiar with the ingredients featured in Jade Mountain’s dishes, but how they prepared and presented them was exciting and refreshing. One of those surprising dishes was the Emerald Farm Green Callaloo Soup, our second starter. While nothing can compare to the Trinidadian version, made with coconut milk and dasheen bush, I appreciated Jade Mountain’s rendition. It emphasized a more earthy flavor of spiced Sunflower seeds, herbs, and baked Spinach Cake. Following the earthy soup, we enjoyed a brighter and lighter dish, the Roasted Artichoke. It came with brie cheese, roasted mushroom, and delightful honey mustard dressing.

Our mains were centered on locally caught fish because it would be wrong to forego fish while vacationing on an island. That being said, we had the Coriander Spiced Rainbow Dorado (better known as Mahi Mahi). This rich and meaty option came with fettuccini, farm vegetables, and rich seafood bisque, taking the ocean flavors to another level. Accompanying the Dorado, the Pan-Seared Rainbow Runner was a buttery white fish that came with Dasheen Fricassee, a local root vegetable cut into cubes to make a flavorful stew. This dish also delivered a whisper of sweetness from pineapple and Coconut Nage.

We ended dinner with the Jade Mountain 2023 Banana Foster. This dessert slightly differed from the classic banana foster, and in the best way possible. Instead of vanilla ice cream, the dessert had slices of banana encrusted with dried corn, giving it a nice crunch, and a creamy cocoa tea ice cream. The classic banana foster transforms into St. Lucian one with cocoa tea. This tea is made from cocoa grown at the resort, which native St. Lucians have enjoyed for generations.

If you are wondering if Jade Mountain has a cocoa estate, the answer is yes, called the Emerald Estate. Unsurprisingly, having a cocoa estate supports the resort’s ethos. At this bean-to-bar factory, you can make your own chocolate. While Vanessa and I didn’t have enough time to try chocolate making, we got a taste of the cocoa from our banana foster dessert. When we returned to our Sanctuary, we were surprised with a couple of chocolates on our bed.

Another way to try Jade Mountain’s authentic cocoa is at breakfast, also hosted at the Jade Mountain Club. If it’s a Sunday, do as the locals do and sip on a rich cup of cocoa tea. Jade makes theirs with coconut milk paired with its national green fig and saltfish dish. Jade’s version features House-Cured Dorado, Green Banana, Avocado Dip, Cucumber-Tomato Salad, and Coconut Oil.

Activities

To truly know an island, one must see and experience it from the water. Vanessa and I boarded the Jazzy Sunset Cruise before devouring our fantastic dinner. Led by a small crew and accompanied by several couples, we sailed around the resort while enjoying live jazz music. Instrumental rifts on Ed Sheeran, Celine Dion, and Bob Marley’s classic songs played throughout the evening. Before the sun slowly transformed from a bright yellow to burnt orange, the cruise entered an area where fins flapped in the glistening waters––we saw dolphins. These majestic sea creatures gave us another outstanding performance that accompanied the music and extraordinary views of the Pitons.

Beach Time

Anse Chastanet Beach, Jade Mountain

Succumbing to relaxation and becoming a total beach bum is perhaps the top priority when visiting any island. At least, it was for Vanessa and me. Although our time was limited, we made it our mission to visit one of the two beautiful, natural, soft sand beaches near Jade Mountain. We took a free shuttle to Anse Chastanet Beach in the wee hours of the morning before returning to reality, where the rhythmic waves rolling ashore would be replaced by aggressive drivers honking their horns.

If you have more time, you should also visit the Anse Mamin, accessible by the resort’s complimentary shuttle service. Like Anse Chastnet, this beach is listed as one of the island’s most exotic beaches.

Whether you’re a guest of a resort or not doesn’t matter – in St. Lucia, all beaches are public property. As a result, everyone has the right to enjoy any beach on the island, regardless of its location.

When Vanessa and I passed security check at Hewanorra International Airport, we both sat in silence, reminiscing our short and magical experience at Jade Mountain, a paradise offering us a world of unmatched beauty.

Summer Sunset: Cocktail With Edible Flowers

Ingredients

Units

For the hibiscus-rosemary syrup:

  • 2 hibiscus tea bags
  • 2 fresh rosemary sprigs, divided
  • 1 cup boiling water
  • 1 1/2 cups (300g) sugar

For the cocktail:

  • 1oz Gin
  • 1oz Infused Hibiscus Rosemary Syrup
  • .25 Fresh Lime Juice

Instructions

For the Hibiscus-Rosemary Syrup:

  • Steep tea bags and 1 rosemary sprig in boiling water for 5 minutes.
  • Strain into a heatproof container with a tight-fitting lid, then add sugar and stir or shake until dissolved. Let cool, then refrigerate for up to 2 weeks

For the cocktail:

  • Combine the hibiscus and rosemary in a pot while adding water and sugar.
  • Bring to a boil for about 2 min then allow to cool.
  • Combine all ingredients in a cocktail shaker with ice.
  • Shake hard for approximately 30 seconds to chill and combine ingredients.
  • Strain out ice.
  • Shake again for approximately 30 seconds to further emulsify ingredients.
  • Double strain into a glass.
  • Garnish and enjoy!

If you’re curious where the unique name “Duomo51” originates from, Duomo is an Italian word that typically refers to a large, ornate cathedral or church, especially one located in a city center. In Italy, many cities have a duomo that serves as a focal point for the community and a symbol of the city’s history and culture. Given the restaurant’s prime location, adjacent to the St. Patrick’s Cathedral and it’s on the 51st street, the name Duomo51 was born.

The Atmosphere

On the seventh floor of the DoubleTree Hotel, the main dining room will immediately catch your attention. Pass the elaborate neon sign, you’ll be wowed by the elegant touches like glass case filled with wines. And you’ll even appreciate the small design elements like the tea light set on each table, which are highly beneficial for reading the menu in the darkness or taking important food pictures for Instagram. Within the dining room, an intimate private area is also available, a space ideal for special occasions like toasting to a new job. Additionally, there is a glass-enclosed terrace, which lends itself more to casual dining and features sweeping views of the Rockefeller Center and St. Patrick’s Cathedral.

The beverage program offers an extensive wine list by glass and bottles originating from many regions in Italy as well as France and California. The Food

Helmed by Executive Chef Vilfredo Hodai, the Tuscan-Italian menu showcases a modern interpretation of Tuscan dishes. To begin try the Melanzane alla Parmigiana ($20). This dish features baked layers of sliced eggplant, tomato, parmigiano- reggiano, and basil sauce. It is evidently a vegetable-forward dish and a delicious one too. Along with this starter, try the Polpettine ($20). These are Italian style meatballs and the chef makes them with veal, tomato sauce, and 36-month age parmigiano-reggiano. They are an Italian classic and also very addictive. You can easily fill up on these meatballs and use the complimentary bread as a vessel to swoop up the sauce.

Following the starters, the attentive servers will clear your table, and delight you with your choice of entree. A classic Italian menu always include pastas and dishes celebrating ingredients from the land and sea. Duomo 51 is no exception, pasta orders include Tartufo ($29) made with homemade pappardelle, wild mushrooms and goat cheese. As well as Gnocchi Ai Gamberi ($32) made with shrimp. Both dishes are served in massive white plates, making them stand out and mouths instantly begin to water.

Among five land options you can order the Scaloppine Di Vitello ($39). This is another classic dish of thinly sliced veal in butter paired with artichoke hearts and capers. As for sea options, you can choose from four like a roasted Italian sea bass (MP) prepared table side.

It’s well-known Italians love their dessert and consequently Duomo51 has several ones to indulge in. For example Il Nostro Tiramisu ($12). The season for outdoor dining is officially here. Nothing beats enjoying a fresh spring salad or lobster roll among majestic palm trees standing tall above crystal blue waters. Or sipping on a refreshing margarita while being tantalized by thousands of city lights. If you’re ready to get started, we’ve gathered some of the best places to dine outdoors and recommendations on what to order while you’re dining al-fresco style.

This restaurant has vibrant outdoor dining is the perfect way to soak up the sunny atmosphere and enjoy the beauty of the season. The open-air enclosed patio is ideal for basking in the outdoors while enjoying a delicious meal. Chef Salil Mehta, Owner of Fungi Hospitality’s has some suggestions on what to order. Try the Crab Larb Salad ($30) a fresh and flavorful Thai salad, made with Lump crab and doused in a tangy lime dressing. For a heartier alternative, try the Nasi Lemak  ($26). This is Malaysia’s national dish, made with coconut rice, curry chicken, and sambal shrimp , anchovies, hard-boiled eggs, fresh cucumber slices and salted peanuts. Each dish is flavorful and perfect for the season, with a unique blend of savory and sweet flavors.

On the corner of Hudson and Perry streets in Manhattan’s West Village neighborhood, the mint green–colored establishment boasts classic bistro tables, which feel more like something you’d find on the boulevards of Paris rather than the streets of New York. While outdoor dining try one of Executive Chef Mary Bartel’s favorite dishes like the Spring snap pea & asparagus salad ($24). Another is the Grilled Black Sea bass with spring vegetable medley and seasonal herbs ($42). 

The Mary Lane, West Village, NY

This charming West Village restaurant has a royal blue dining shed pushed up against the curb, offering great protection from the direct sunlight or rainfall. What to order while catching Hudson River breezes? The menu led by Chef Andrew Sutin is market-driven offering lots of seafood, a few luxury ingredients, and plenty of vegetables. If you’re brunching outdoors, order the spicy shakshuka with baked eggs($17) paired with a specialty cocktail. For dinner or lunch try the sweet potato and tuscan kale ‘lasagna’ ($28). 

Little Rascal, Greenpoint, New York

Founded by brothers Halil and Öner Gündogdu, Little Rascal is a cutting-edge cocktail bar located in Greenpoint Brooklyn. During the spring season, the bar opens it’s charming back patio that has comfy blue pillows and lush plant life for outdoor dining.  Spring special cocktails include The Dough Of Existence ($18), featuring ingredients like spiced rum and soursop nectar. There’s also the Hugh Disco ($18), a mezcal based cocktail with intriguing ingredients such as miso-washed aquavit, golden coconut milk. Lastly the Flaco and Audrey ($16), a fundy gin based cocktail, with notes of cherry blossoms, chamomile, and peach. Meanwhile dishes (only available for dinner) include Burrata ($17),  Halloumi Croquettes, ($18), Smoked Lamb Tacos ($18) and Grilled Artichokes ($16).

Positioned in the heart of Williamsburg, Fandi Mata is a combination of a lounge, tapas restaurant and postindustrial jungle, offering Mediterranean-inspired dishes. Meanwhile, on the second floor there’s a mezcaleria, Little Oaxaca.The rustic and industrial establishment is shielded by sky-high ceilings, with lush, verdant foliage and colorful mosaic accents giving an indoor-outdoor feel. For outdoor dining season the delightfully bright and refreshing Red Snapper Ceviche($22) is a must have. Also you can’t go wrong with shareable Mezze Platter ($25) boasting different textures and flavors. While the restaurant is a botanical oasis, these dishes will instantly transport you to a tropical paradise. To pair with the dishes, Fandi Mata has an excellent array of cocktails and mocktails to order.

Nestled in the serene Catskill Mountains, Eastwind Oliverea Valley is home to Dandelion, serving up a menu featuring “forage-to-table,” plant-forward, international comfort food on their open-air patio. Dandelion’s outdoor patio allows guests to feast on the bounties of the Catskills region while taking in the natural splendor of the area. Standouts from the menu include seasonally-focused favorites like the House-Made Cavatelli ($32) with wild mushrooms, locally foraged herbs, and parmesan. And Lohikeitto,($38) a Finnish-style stew featuring locally farmed steelhead trout, freshly picked dill, and carrots.

This signature restaurant offers diners a plethora of fresh seafood, including oysters and Raw Bar, complemented by juicy ribeyes, risottos, and more. The views are second to none, with cascading views of the picturesque Cape Cod Bay. The Ocean Terrace menu is designed to complement the beautiful natural surroundings while outdoor dining on a sun-kissed patio. Native and local seafood is the focus and paired with Spring ingredients. A few standout spring dishes on the dinner menu include Seared Scallops ($19) and Chatam Mussels ($15).

Springtime in Nantucket equates to beautiful daffodils blooming during the Daffodil festival, the sunshine warming up the coastline, and delicious cuisine that can be tried at Via Mare, the Roman & Williams designed restaurant and bar inside the boutique Greydon House hotel on Nantucket Island.  A whimsical take on the Venetian tradition of small plate dining & drinking , Via Mare looks to Venezia’s long history as a central hub in the spice trades & adventurously follows these trade winds in curating their eclectic cuisine, wine & cocktail programs. The outdoor dining experience is reminiscent of being in secret garden, paired with bistro lights that gives an enchanted glow at night. For eats, it’s recommended to try takes on New England classics, like Mussels ($27), cooked in coconut curry and the Fresh Pesco Del Giorno ($44). Make the experience more exciting by ordering the Mcdade Sunrise ($17), made with tequila, lime, orange juice and agave.

Calypso Bar and Grille, Virginia Beach

Serving up fresh seafood and great cocktails at the Virginia Beach Oceanfront, Calypso Bar & Grill boasts the largest covered patio at the beach. Their outdoor seating comes with panoramic oceanfront views provide the perfect backdrop for a regular lineup of some of our favorite Virginia Beach bands. It’s a must to partake in happy hour while taking in views of the Atlantic Ocean beachside at this beachside bar. Whether its a Domestic Beer $2 paired with BBQ Chicken Flatbread ($8) or glass of wine ($4) with Oysters ($0.99 each).

Just 90 miles from Cuba with the beach as its backdoor, the Southernmost Beach Cafè, inside the Southernmost Beach Resort, Soak up the Cafè’s eclectic atmosphere that combines iconic Key West design with the sophistication of a French-Caribbean bistro. If you’re dining for dinner, Executive Chef Alex Kruger-Springer suggests ordering the Daily Fresh Catch ($45).It’s a that dish pops with freshly caught local fish, encrusted in a macadamia nut crust, surrounded by other fresh ingredients. The Argentinian Clams  ($16) are also great for ordering. This dish speaks to the Spanish roots here in Key West. It has an abundance of flavors, starting with the savory notes from the Argentinian chorizo and finishing with the bright saffron wine sauce. All topped with a fresh herb focaccia crostini—a perfect appetizer for Spring. Lastly, try the Garden Pasta ($29) it’s a dish that screams Spring. 

Thoreau’s, Wequassett Resort & Golf Club, MA

Springtime on Cape Cod is perfect for enjoying time outdoors. As the days get longer and the temperatures rise, Wequassett Resort & Golf Club’s grounds come alive with the colors and fragrances of blooming flowers, vibrant foliage, and lush green grass. The resort’s bar, Thoreau’s offers the perfect summertime coastal dining experience on the Cape. It has a relaxed yet elegant vibe with peaked canopies and the fresh ocean breeze. Dive into the menu featuring a spin on cape cod classics like Fish and Chips ($28), Traditional Lobster Roll ($40-$65) while soaking up the mesmerizing views.

Cibo Urban Pizzeria, Phoenix, Arizona

A chic restored 1913 bungalow houses the main restaurant of this urban downtown pizzeria, but you’ll want to find a spot on the patio, where light-wrapped trees and soft live music create a cozy sense of romance. To complement the romantic mood, order a glass of wine paired with an artisan pizzas ($12-17) and or a bowl of handmade pasta ($16-$18). 

Citizen, Seattle, Washington

In the warmer months, Lower Queen Anne’s all-day cafe is a popular place to chill outside in its sun-drenched cafe. Their beer garden is  one of the largest patios in town, with astro turf carpeting, fire pits, and a separate outdoor bar. There, you can grab great drinks ranging from a Double Espresso White Russian ($10.95) and Frozen Boozy Slushies ($12) to a Nutella Mocha ($5) that tastes like you’ve been transported to Willy Wonka Chocolate Factory. Food include tasty Korean-Mexican food like Bulgogi Nachos ($13.95), Bulgogi Tacos ($13.95) and Bulgogi Burritos ($14.95).

The Meritage Resort & Spa is home to the farm-to-table Italian-inspired restaurant Olive & Hay. After a pilates class and deep massage at the resort, satisfy your hunger cues by booking a table outdoors.  In the warmer months, Chef de Cuisine, Rachel Medeiros recommends ordering the Burrata ($16), this dish features strawberries which are one of the first fruits of the spring season. Also the Spinach Gnudi ($26) boasts the sweet and delicate flavors of Spring. It has a classic spinach and ricotta cheese pairing with fresh asparagus, sweet peas, and radishes.

At VASO visitors can enjoy an evening of creative cocktails and tapas with a front-row rooftop seat in the sky. This hidden Midwest gem boasts a swanky atmosphere and a Spanish-inspired menu with panoramic views of the Scioto River and blooming redbuds unlike anything else in Columbus.  Executive Chef David Belknap recommends ordering the Oysters Rockefeller Succotash. It’s one of his favorite dishes and with the weather warming up, oysters will be meatier. Secondly, Succotash is a long-standing staple in the Midwest, especially once fresh beans and produce become available. Put the two together, and you end up with a harmonious dish with the best of the season. 

Percheron, Crossroads Hotel, Kansas City, Missouri

Springtime means that Kansas City’s favorite rooftop Percheron reopens for the season. The beautiful rooftop offers sweeping views of the city. Rooftop dining calls for cocktails. And this seasonal bar at Crossroads Hotel has a few to choose from. Sip on the Ya, Ya($13) and Sure, Sure slushies ($13) and an array of newly added cocktail additions including the Strawberry Negroni ($14) and Za’atar Paloma. ($14)  As for eats, Percheron recently released a new Mediterranean menu, with Spanish, Lebanese and Israeli influences. Dish highlights include Kofta Skewers ($16) and a dessert of Baklava pops, ($10) to help combat the heat.

The Apparatus Room Detroit Foundation Hotel , Detroit, Michigan

Located in the heart of Motor City, Detroit Foundation Hotel offers a charming spring dining experience at The Apparatus Room. The outdoor patio area offers sunny al fresco dining allowing guests to take full advantage of the weather. For brunch try a favorite like the House Prime Smash Burger ($19) and dinner it’s a must to start with the night with the 13 year old Sourdough with fennel butter ($9).
